The Ceviche is the peruvian national dish, specially in the coastal cities close to the pacific ocean. In Peru the Ceviche is prepared with different kind of fish depending the zone of extraction.
Peruvian lime is very strong, it's acidity could cook the fish in less the 10 minutes.
This dish is considered a japanese peruvian fusion. Japanese inmigrants eats raw fish with soy sauce (sashimi), in Peru the lime replace it, creating an amazing flavor!.
