The chaufas are a chinese dish with peruvian spices. This dish is a fusion between 2 cultures, chinese and peruvian due to a strong chinese immigration during the 40's. The difference between the Chinese fried rice and the Peruvian Chaufa is basically it's flavor. The Chaufa is more deep, strong in flavor with more meat or vegetables mixed. In the preparation all the ingredients are peruvian including the soy sauce.
